Why does my HD projector not allow me to view beyound 480i with component cables? - hd video projector

So I have a PS3 and I have cable with component video, to enjoy my games in high definition. I also have a 52 inch widescreen TV HD projector with S-video connections and 2 component. Furthermore, it is called Compnent HD video. I tried to play 720p hook element in both planes, but I do not see any strange lines on my TV. I do not understand why say it's an HDTV if I can not see everything in HD?
